4 tsp. olive oil
large onion, chopped
cloves garlic, minced
shredded romaine
chile peppers, chopped
1/4 c. chopped cilantro
1/4 tsp. dried oregano
1 1/2 c. egg substitute or 12 egg whites
whole wheat tortillas, each about 100 calories and with at least 5 grams fiber, such as flat out
3/4 c. fat-free sour cream
alfalfa sprouts
diced fresh tomatoes or no-salt-added canned stewed tomatoes, drained
  1. Heat the oil in a skillet over medium-low heat. Cook the onion and garlic, stirring constantly, for 4 to 5 minutes, or until softened. Add the romaine, peppers, cilantro, and oregano. Cook about 3 minutes, or until the lettuce is limp. Remove to a bowl.
  2. Coat the skillet with cooking spray and warm over low heat. Cook the egg substitute or egg whites for 3 to 5 minutes, stirring, until set.
  3. Top each tortilla with one-quarter each of the eggs, chili mixture, sour cream, sprouts, and tomatoes.
