fresh mint leaves (you’ll need 2 large bunches)
pine nuts or blanched almonds
clove garlic
1/2 tsp. each salt and grated lemon zest
1/4 c. each olive oil and water
  1. Pulse all ingredients except oil and water in a food processor until mint is finely chopped.
  2. Add oil and water; pulse until blended. Scrape into a small serving bowl. Press plastic wrap directly onto the surface to prevent discoloration; chill until ready to serve with the lamb. Plan ahead: Prepare the day before and refrigerate.
